Toggle Zoom Z jumps between fit-to-window and your last close-up level—handy for flicking between detail work and the whole picture. You can also pinch on a trackpad or Command-scroll (or Option-scroll) to zoom around the cursor.
The Zoom to Fit button in the sidebar fits the canvas once. Option-click it instead to turn on Auto Fit, which keeps the canvas fitted as you resize the window; a plain click turns Auto Fit off again.
Hold Space and drag to pan from any tool, scroll with a trackpad or mouse wheel, or select the Move tool. Release Space and your previous tool comes right back.
